Today was my first day of a new semester (I’m a college student.) I left my house really early because I didn’t know how traffic was going to be that’s the worst thing here in Houston. I made it really early to campus so I went and bought my favorite thing to start out my day Starbucks ahhh I really love Starbucks. I tried out their new egg white breakfast biscuits and they are really good and the price isn’t bad around $3 they have turkey bacon, chicken sausage, and spinach. It was rainy and cold and bought a soy chai tea latte yum.
My first class is Intro to Web Design, I’m excited about it because I love computers and I’ll update this website because come on its not so kawaii lol. After class, I went to buy books at the bookstore and while I was waiting in a long line I noticed A LOT of students were not only buying books but chips, coke, and not so healthy snacks. Of course the health freak that I am I thought bleeehhh gross I usually carry fruit or granola bars. People have told me “Oh Emily I wish I could eat healthy like you but I just don’t have the time for it.” YES YOU DO! You just need to stop being lazy, make time, and instead of driving 10 minutes to your local fast food place and waiting another 5 minutes on your so called “food” you can make a healthy lunch at home in 5 minutes and spend less money.
I love to eat, so when I came home today I made what I call Mexican tuna. My mom makes this and its suuppper easy. I’m not a fan of tomatoes and when it comes to onions and garlic I’m a vampire I detest onions and garlic ewww. This recipe do require tomatoes and onions but trust me it gives it a good flavor.
Time: 5 minutes
Ingredients: (no cooking required)
- 1 can of tuna (I used the 2 in 1 can so my brother can eat when he gets home)
- 1/2 of a tomato chopped
- 1/2 (or however spicy you want it to be) chopped jalapeño you can use fresh or the kind in vinegar
- chopped onions (however much you want I chopped them into really tiny bits in pieces and used very little)
- mayonnaise (however much you like)
- crackers (it tastes better with crackers …bread mmm not so much)
The first thing you do is chop tomatoes, jalapeños, and onions. (be careful)
Optional: Since I detest onions and hate having the smell on my hands (even if I wash them a lot) and when I chop jalapeños it doesn’t matter if I washed my hands a lot when I take out my contacts I’ll feel the burn :*( sooo I used a sandwich ziploc bag as a glove haha
I also used very little olive oil mayonnaise just to give it consistency. According to KRAFT mayo with olive oil mayonnaise it has “1/2 the fat and calories of regular mayonnaise.” Plus olive oil is good for you 🙂 Hope you enjoy 🙂
